STUBB’S
POACHED BRINED SALMON
Ingredients:
Salmon and retained brine as prepared for STUBB'S
Honey-Brined Salmon
Yield:
12 ounces
Directions:
Pour brine from above and 2 cups water into large sauce
pan. Bring to boil over high heat. Add brined salmon, making
sure fish is completely submerged. As soon as a few bubbles
start to break the surface, reduce heat to keep at a bare
simmer. After adding salmon to hot liquid, allow 4-5 minutes
for 3/4 inch thick fillet, and 7-8 minutes for 1-1/4 inch
thickness; interior should be just barely undercooked. Remove
from liquid and let cool. Serve chilled or at room temperature,
alone or with a sauce, as part of a salad, or in STUBB'S
Lemon-Salmon Sandwich.
