GINGER-WATERMELON
"CEVICHE"
Because
the shrimp is precooked, it’s not true “ceviche”
but the flavor and texture is just as good.
Ingredients:
6 ounces cooked Jamaican Poached Shrimp (or Curried Variation),
with or without shells
1-1/2 cups (8 ounces) seedless watermelon flesh, diced
1 cup (4 ounces) finely chopped red onion
1 finely chopped serrano chile (without stem or seeds)
2 tablespoons fresh lime juice
3/4 cup (1 ounce) finely chopped cilantro
2 teaspoons STUBB’S Rosemary-Ginger Rub
Yield:
2-3 servings
Directions:
Shell the shrimp, if necessary. Slice the shrimp in half,
through the back, deveining as needed. Toss the remaining
ingredients together. Mix in the shrimp and chill until
ready to use (30 minutes to 6 hours for best flavors). Serve
in a small cup or stemmed glass, with crackers or chips
on the side.
