STUBB’S
MEXICAN BEEF FILLING
Ingredients:
2 pounds ground beef
1 onion, diced (8 ounces)
2 garlic cloves, minced
3 tablespoons STUBB’S Chile-Lime Rub
2 teaspoons ground cumin
2 teaspoons dried marjoram, crushed
1/4 cup tomato paste
1 cup STUBB’S Chicken Marinade
Yield:
6 cups
Directions:
Brown the beef over medium-high heat in a large skillet,
breaking it into chunks. Add the onion and garlic. Cook
until the onion softens. Stir in the STUBB’S Chile-Lime
Rub, cumin, marjoram, tomato paste, and STUBB’S Chicken
Marinade. Bring to a boil. Reduce the heat and simmer 10-15
minutes for the flavors to blend and the sauce to thicken.
Suggestion: Cuban Picadillo Filling: Stir
in raisins and stuffed green olives, halved, with the onion.
Add slivered almonds in the last 5 minutes of cooking.
